Black truffle breakings: bursting with truffle flavour
Black truffle breakings are minced truffles that are bursting with flavour. The truffle breakings come in a jar and have already been appertised in our production facilities.
Appertisation is a process for sterilising fresh truffles so that they can be stored for longer while maintaining their precious aromas.
In the case of truffle breakings, the black truffle is first minced, then put into jars. The jars are then placed in an autoclave to be cooked at a high temperature, thus sterilising the truffles.
There are many advantages of preserved black truffles, most notably being, of course, the fact that they’re easier to store. While a fresh truffle must be kept cold, under specific conditions, and must be consumed within five to seven days, the appertised black truffle doesn’t require any special care and can be stored for several years.
However, once the jar has been opened, like any preserved product, the contents should be enjoyed the same day or within a few days. After opening, make sure to store the truffles in the refrigerator in a sealed glass container, such as the jar they came in.

Like any appertised truffle, the truffle breakings should be heated to unleash their aromas. They are perfect for making stuffing or gratins.
Since black truffle has an affinity for fat, the black truffle breakings can also be used to make truffle-flavoured butter. Mix truffle breakings with butter, then let the mixture rest in the refrigerator for 24 hours to let the black truffle completely infuse the butter with all its flavours.
