The Burgundy truffle, also known as the autumn truffle, is harvested in France, Spain, Italy and in some Eastern European countries, such as Bulgaria.

It has a slightly more intense aroma and stronger character than its cousin, the summer truffle. Initially, it has a bitter taste but this gives way to subtler flavours of hazelnut and mushroom.

To fully enjoy all the flavours of the autumn truffle, it is recommended you comply with the following quantities: Just to try: 5-10 grams per person Tasting: 10-15 grams per person If you want to add Burgundy truffles to a recipe, keep the truffle content to 10% of the total ingredients.

For example, add 10 g of fresh Burgundy truffles to 100 g of soft cheese.

Storage

Store in the refrigerator (between 2 °C and 5 °C) in an airtight container lined with absorbent kitchen paper (to be changed every day). Eat within 7-10 days.

The Burgundy truffle has blackish skin and white-veined flesh that turns dark brown as it matures. It is sometimes confused with the summer truffle, which comes earlier in the season. However, although they are similar, the flavours of the Burgundy truffle are somewhat more pronounced and intense, and its season runs to November.

The Burgundy truffle can be enjoyed the same way as the summer truffle, with no need to cook or heat. Simply grate over your dishes at the last minute.

It is full of flavour and will add delicious earthy and mushroom notes to your concoctions.

How to enjoy

The Burgundy truffle lends itself to a variety of simple uses. Just enjoy it on a slice of bread with a drizzle of olive oil and a pinch of fleur de sel.
Or grate over a salad, fish or meat.

Be aware – the fresh Burgundy truffle doesn’t like heat so grate it over your dishes at the last minute.
