Preparation
Melt the chocolate
Pour the dark chocolate into a saucepan with the milk and gently melt it while stirring until you achieve a smooth mixture.
Separate the eggs
Separate the egg whites from the yolks. Then incorporate the egg yolks into the melted chocolate and mix thoroughly.
Whip the egg whites
Whip the egg whites until stiff peaks form with a pinch of salt.
Fold in the egg whites
Gently add the whipped egg whites to the chocolate mixture in several additions to maintain a light and airy mousse.
Add the black truffle
Allow the mixture to cool slightly. Finely chop the fresh black truffle or black truffle pieces and gently fold them into the mousse.
Let it rest
Divide the mousse into small glasses or ramekins and place them in the refrigerator for 12 hours to firm up the texture and allow the truffle aromas to infuse into the chocolate.
Serve
Take the mousses out of the refrigerator a few minutes before serving.
Plantin Chef’s tip(s)
Prepare this mousse the day before: the 12 hours of resting not only allow for a beautiful texture but also enable the black truffle to gradually infuse the chocolate.
