Périgord black truffle
Tuber Melanosporum
The black truffle Tuber Melanosporum, also known as the “black diamond” of gastronomy or the Périgord black truffle, is harvested in France as well as in Spain and Italy. Its aroma is powerful and incomparable, evoking damp forest undergrowth, earth, humus and mushrooms. On the palate, both tender and slightly firm, it reveals a subtle and refined flavor.
Our truffles are washed, carefully sorted and selected, then placed in sachets to ensure optimal preservation. Upon receipt, rinse the truffles and pat them dry. To store them, place the truffles in an airtight container with absorbent paper (to be changed every two days), then keep them in the refrigerator between 2°C and 5°C.
Best consumed within 7 days. Truffles may also be frozen.
The price of fresh truffles fluctuates weekly, which is why we are unable to delay shipments of fresh truffles.
---
At the very beginning of the season, despite a meticulous selection process, some black truffles may naturally appear slightly lighter in color. This does not affect their quality, aroma or flavor; it is simply a visual characteristic of the first harvests.
