Preparation
Prepare the Bread
Lightly spread slices of country bread with regular butter or truffle butter.
Add the Comté
Distribute the Comté on the slices that will form the base of the croque-monsieur. Or use Comté cream.
Add the Bacon
Place a slice of Colonnata lard or bacon on each base.
Add the Black Truffle
Arrange thin slices of fresh black truffle on the bacon. Add another slice of bacon, then a few more slices of black truffle.
Close the Croques
Cover with the remaining slices of bread and press down gently.
Cook in the Pan
Heat a pan with a bit of butter or oil. Place the croque-monsieur in the pan and let them brown for about 2 minutes on each side, until the bread is crispy and the Comté is melted.
Serve
Serve immediately while the cheese is still gooey.
Plantin Chef’s tip(s)
To enhance the truffle flavors, use a pre-prepared truffle butter: the resting time allows the black truffle to infuse its aroma into the butter.
