Goat Cheese, Nectarine, and Black Truffle Toasts

Preparation

Preheat the oven
Preheat the oven to 180 °C.
Prepare the bread slices
Cut the half baguette into slices about 1 cm thick and arrange them on a baking sheet.
Toast the bread
Lightly drizzle the slices with extra virgin olive oil flavored with black truffle, then bake them for 3 to 5 minutes, watching for color.
Prepare the topping
Wash the nectarine and slice it into thin half-slices. Also, cut the fresh goat cheese into nice slices.
Assemble the toasts
Once out of the oven, spread each slice of bread with winter truffle paste. Then add a slice of fresh goat cheese followed by a half-slice of nectarine.
Add the black truffle
Finish each toast with a thin slice of fresh black truffle and a light sprinkle of fleur de sel.
Serve
Serve immediately as an appetizer or a bite-sized snack.

Plantin Chef’s tip(s)

Add the black truffle only at the last moment, on the still slightly warm toasts. The heat of the bread will help release its aromas without altering its texture.
