For 24 mini puffs
Preheat your oven to 180° C (350°F).
Roll out your puff pastry, and with a round cookie cutter, cut circles a little larger than the diameter of your goat cheese log.
Using a pastry brush, brush the circles with the egg yolk added with a little water. Then place them on a baking sheet covered with baking paper.
Bake while monitoring the cooking, the circles will swell and form small "puffs".
Take them out of the oven, let cool and with a knife point, cut the "puff pastry" halfway up.
With a small spoon, fill the lower part of the puff pastry with a PLANTIN vegetable delight spreadwith summer truffles of your choice.
Cut, with a sharp knife and passed under hot water, thin slices of fresh goat's log, then place a slice on the vegetable delight with summer truffle.
Finally, close the puff pastry with its cap.
