From May to August, the fresh summer truffle (Tuber Aestivum) reveals its unique character: beige flesh veined with white, a black rough skin, and a subtle aroma of undergrowth and hazelnut.
Less powerful than the winter black truffle, it stands out for its finesse and its ability to elevate your summer dishes.
At Plantin, we carefully select each fresh truffle to guarantee impeccable quality. Perfect for both truffle lovers and chefs.

Cooking with Plantin
A few inspiring ideas to showcase your fresh summer truffle!
Summer truffle (Tuber Aestivum) is lighter in taste and aroma than winter black truffle (Tuber Melanosporum). It develops delicate notes of hazelnut and undergrowth, ideal for more refined and delicate summer cooking.
Wrap it in dry absorbent paper, place it in an airtight container and keep it in the refrigerator. Change the paper every day. Best consumed within 7 to 10 days.
Yes, you can freeze it whole or grated, in a small airtight jar. It will lose a little texture, but will retain its aromas well, making it ideal for adding to hot dishes.
It is mainly used raw, shaved or grated over simple dishes: eggs, pasta, burrata, risotto… Always add it as a finishing touch to preserve its delicate aroma.
