Halloween Bagel with Chicken and Truffle Sauce
For Halloween, the bagel is dressed in black and orange in a version that is both indulgent and surprising. Topped with golden chicken, crunchy salad, and red onion, it is enhanced by your choice of Truflirt Plantin sauce, with notes of pickles and truffle, or by the truffled Comté AOP cream, which is sweeter and more generous. An original recipe that retains all the gourmet spirit of Plantin.

Preparation
Prepare the Halloween Breads
Separate the bagels in half. Give the top half an orange hue using food coloring and color the bottom half black with squid ink. The goal is to achieve the characteristic orange and black contrast of Halloween.
Prepare the Chicken
Cut the chicken fillets into pieces or thin slices. Lightly salt and pepper.
Cook the Chicken
Heat a drizzle of olive oil in a pan. Brown the chicken on each side until well colored and fully cooked. Set aside for a moment.
Prepare the Toppings
Wash and dry the salad. Peel the red onion and slice it thinly.
Choose the Truffle Sauce
For a fresh and slightly tangy version, use Truflirt sauce with pickles and truffles from Plantin. For a creamier and cheesier result, choose the Truffle Comté AOP Cream from Plantin.
Assemble the Bagels
Place a few leaves of salad on the black base of the bagel. Generously add the chicken, a few slices of red onion, and then the chosen truffle sauce.
Finalize
Close with the orange bread and serve immediately to enjoy the contrast between the bread, the still-warm chicken, and the sauce.
Plantin Chef’s tip(s)
To better highlight the Plantin sauce, add a first layer directly on the bread, then a light drizzle on the chicken when plating. The Truflirt will give the bagel a brighter and more original profile thanks to the pickles, while the truffled Comté AOP cream will add more creaminess and indulgence. Both versions can thus be offered from the same recipe.
