- 25 cl of gin
- 5 to 10 g of fresh summer truffle
For the cocktail composition
- Crushed ice
- 2 ladles of homemade apricot syrup or 1 ladle of apricot syrup
- 1 ladle of homemade truffle gin
- Well-chilled sparkling water
- A few slices of fresh summer truffle
- 1 sprig of rosemary for decoration

Preparation
Prepare Homemade Truffle Gin
In a small clean bottle or jar, pour about 250 ml of gin. Add 5 to 10 g of fresh summer truffle, sliced thinly, then seal tightly. Let it infuse in a cool place for 12 to 24 hours so the gin gently absorbs the truffle's aroma. Strain if necessary before use and keep the gin well chilled.
Prepare the Cocktail
Fill the glass with crushed ice to create a nice cold base. Then pour in the homemade apricot syrup, followed by the homemade truffle gin. Gently top up with well-chilled sparkling water to the rim of the glass. Mix very lightly with a spoon to preserve the bubbles. Add a few thin slices of fresh summer truffle on the surface, then place a sprig of rosemary for decoration. Serve immediately, well chilled.

Add the fresh summer truffle slices at the very last moment, just before serving. This helps preserve their delicate aroma and adds an elegant touch without overpowering the freshness of the apricot, the bubbles of the sparkling water, and the herbal note of the rosemary.
