Truffle Halloween Deviled Eggs
For Halloween, traditional deviled eggs transform into little pumpkin-shaped bites. A creamy filling spiced with a hint of cayenne pepper pairs with the aroma of truffle thanks to Plantin's winter truffle mayonnaise or TRUFOLK sauce. A few sprigs of chives are enough to complete the decoration for an appetizer that is both delicious and visually appealing.

Preparation
Cooking the Eggs
Place the eggs in a pot of water and boil them for 9 to 10 minutes from the time it starts boiling. Then immediately plunge them into cold water to stop the cooking.
Preparing the Eggs
Gently peel the eggs and cut them in half lengthwise. Remove the yolks and place them in a mixing bowl.
Preparing the Truffle Filling
Mash the yolks with a fork. Add about three tablespoons of Plantin winter truffle mayonnaise or, for an alternative version, Plantin TRUFOLK sauce. Add a small pinch of cayenne pepper, season lightly with salt, and pepper.
Achieving a Creamy Filling
Mix until you have a smooth and creamy mixture. Adjust the amount of sauce if necessary to achieve a texture soft enough to be piped.
Forming the Little Pumpkins
Place the mixture in a piping bag fitted with a star tip. Generously fill each egg white half, creating several peaks to resemble the segments of a small pumpkin.
Finalizing the Halloween Decor
Lightly sprinkle the eggs with cayenne pepper to enhance their orange color. Insert a small piece of chives into the center of each egg to form the pumpkin stem.
Serving
Keep the mimosa eggs chilled until ready to serve.
Plantin Chef’s tip(s)
Use cayenne pepper sparingly: it should add a slight kick and contribute to the presentation without overpowering the truffle flavors. For a visual similar to the photo, use a fluted piping tip and pipe the filling in several strips. The small piece of chives placed vertically in the center will immediately give the appearance of a mini pumpkin.
