Homemade Summer Truffle Pizza

Préparation

Preheat the oven for a crispy crust
Preheat the oven to 220°C, ideally using the convection setting. A high temperature is essential for successfully making homemade truffle pizza: it allows the dough to quickly sear, making it crispy on the edges while keeping the toppings melty without drying out the truffle sauce.
Prepare the pizza dough
Roll out the pizza dough on a baking sheet lined with parchment paper, or thinly stretch it if using homemade dough. Be sure to form a regular disk, not too thick or too fragile, to ensure even cooking. A thin crust will better highlight the truffle sauce and melted cheese.
Spread with summer truffle sauce
Spread the summer truffle sauce evenly over the entire surface of the dough, leaving about one centimeter free on the edges. Use the back of a spoon to create a smooth and generous layer. This creamy base adds the aromatic depth of truffle while effectively replacing a classic tomato sauce.
Add the cheeses
Place the mozzarella on top of the sauce, then add the grated parmesan. The mozzarella provides a melty and indulgent texture, while the parmesan enhances the salty note and richness of the pizza. For a milder recipe, opt for well-drained mozzarella to maintain the crust's crispiness during baking.
