Preparation
Prepare the onion
Finely slice half an onion. Sauté it in a saucepan with a drizzle of olive oil and a pinch of salt, without letting it color.
Add the rice
Pour the Arborio rice into the saucepan and stir to coat it well with the fat. Continue cooking for a few moments until the grains become slightly translucent.
Deglaze with white wine
Add the white wine and stir until it is almost completely absorbed.
Gradually cook the risotto
Add water gradually, using about 2.5 times the volume of rice in water. Maintain a steady cooking temperature and stir frequently. Add more water as soon as the previous amount has been absorbed.
Add black truffle juice
When the rice is almost cooked, pour in the black truffle juice. Stir and let the rice absorb the liquid.
Incorporate butter and parmesan
Add the butter cut into small cubes along with the grated parmesan. Gently mix to achieve a creamy and shiny texture.
Add black truffle shavings
Incorporate the black truffle shavings at the last moment and mix gently.
Serve
Serve the risotto immediately in deep plates while it is still creamy.
Plantin Chef’s tip(s)
Add the black truffle juice during the last wetting of the risotto. This allows the rice to absorb it directly and concentrate its flavors. Then, incorporate the truffle pieces only at the end of the preparation.
