Black Truffle and Comté Cream Croque Monsieur

Preparation

Prepare the Comté Béchamel
Melt 25 g of butter in a saucepan. Add the flour while stirring with a wooden spoon, then gradually pour in the milk. Cook over low heat while mixing until the sauce thickens. Then incorporate half of the grated Comté and mix well until you have a smooth and creamy béchamel. Set aside.
Prepare the Truffle
This recipe can be made with either fresh truffle or summer truffle carpaccio. If using fresh truffle, slice it thinly using a mandoline or a sharp knife. If using summer truffle carpaccio, drain it carefully and save the oil for future use, such as on mashed potatoes, baked potatoes, or salad.
Prepare the Bread
Lightly toast the slices of bread in a toaster or under the grill in the oven on both sides. Then lightly butter them for extra flavor.
Assemble the Croques
Spread a thin layer of AOP Comté cream with black truffle on half of the slices of bread. Add a generous spoonful of béchamel on top, then place half a slice of cooked ham on each base. Next, distribute the slices of fresh truffle or summer truffle carpaccio. Spread the remaining slices of bread with a little béchamel, then place them on top of the croques, with the spread side facing in.
Cook the Croques
Brown the croque-monsieur in a lightly buttered pan for a few minutes until they are crispy and nicely colored. Serve them hot.

Plantin Chef’s tip(s)

For an even more indulgent result, add some grated Comté cheese on top just before cooking in the pan or under the grill. If you are using fresh truffle, avoid heating it too much to best preserve its aromas. You can also add a few slices at the time of serving to enhance the truffle fragrance.
