Preparation
Soften the Butter
Take the butter out of the refrigerator well in advance so that it softens to room temperature. It should be soft and easy to work with, without being melted. Place it in a bowl.
Prepare the Black Truffle
Finely chop the black truffle using a sharp knife. You can also lightly crush it with a fork to keep pieces larger or smaller depending on the desired texture. If using black truffle pieces, drain them slightly before incorporating them into the butter.
Mix the Truffle and Butter
Add the black truffle to the softened butter. Work the mixture with a fork or spatula until the truffle is evenly distributed. Optionally, add a small pinch of fleur de sel, being careful not to overpower the truffle's flavors.
Shape the Truffle Butter
Place the truffle butter in a small bowl or butter dish. You can also place it on a sheet of parchment paper or plastic wrap, then roll it to form a small, even log. Carefully seal the ends.
Let Infuse
Place the truffle butter in the refrigerator for at least 24 hours before enjoying. This resting time allows the flavors of the black truffle to gradually infuse into the butter, resulting in a more intense aroma.
Serve the Truffle Butter
Take the truffle butter out of the refrigerator a few minutes before serving so that it regains a slightly soft texture. Enjoy it on a slice of toasted bread or use it to add a truffle touch to your recipes.
Plantin Chef’s tip(s)
To preserve all the delicacy of black truffle, incorporate it into softened but not melted butter. Excessive heat could diminish its aromas. For a more intense result, let the butter rest in the refrigerator for 24 to 48 hours in an airtight container. You can also freeze the truffle butter in small portions for easy use in your next recipes.
