  • 1 puff pastry
  • 150 g of soft fresh goat cheese
  • 30 to 40 g of fresh Burgundy truffle
  • 30 g of butter
  • 1 tablespoon of honey - Plantin
  • 1 tablespoon of balsamic vinegar
  • A few walnut halves
  • A few mâche leaves
  • Salt
  • Pepper

Endive Tatin with Soft Goat Cheese and Burgundy Truffle

Original and full of character, this recipe combines meltingly tender and slightly caramelized endives with the sweetness of fresh goat cheese and the crispness of puff pastry. Added at the time of plating, the Burgundy truffle brings its woody and delicately nutty notes, creating a refined and gourmet starter.

Endive Tarts with Soft Goat Cheese and Burgundy Truffle

Preparation

Prepare the Endives
Remove the outer leaves if necessary, then cut the endives in half lengthwise. Remove the hard part at their base.
Caramelize the Endives
Melt the butter in a large skillet. Place the endives cut side down and let them brown for a few minutes. Add the honey and balsamic vinegar. Lightly salt and pepper, then let cook on low heat for about 15 minutes. The endives should become tender and slightly caramelized.
Prepare the Molds
Preheat the oven to 190 °C. Distribute the endives into four small individual tart molds, with the caramelized side against the bottom.
Add the Goat Cheese
Crumble the fresh goat cheese over the endives. Add a few coarsely chopped walnut halves.
Cover with Puff Pastry
Cut out four discs of pastry slightly larger than the molds. Place them over the filling and gently tuck the edges inside. Prick each disc with a fork.
Bake the Tarts
Bake for about 20 minutes, until the pastry is well risen and golden. Let the tarts rest for two to three minutes before carefully flipping them onto plates.
Add the Burgundy Truffle
Place very thin slices of Burgundy truffle on the still warm tarts. Serve with a few lightly dressed mâche leaves.

Add the truffle when the tatins are still warm, but not hot. This gentle heat will bring out its aromas without altering them.
