Christmas Mont d'Or with Black Truffle

A winter essential reimagined in a festive and intensely indulgent version.
The Mont d'Or is roasted directly in its box until it becomes perfectly creamy, then enhanced with thin slices of fresh black truffle. A few notes of garlic, rosemary, and white wine complete this generous recipe.
Served with beautiful slices of toasted bread, it’s an ideal dish to share during the Christmas festivities.

Christmas Mont d'Or with Black Truffle

Preparation

Prepare the Mont d'Or
Preheat the oven to 180 °C. Remove the plastic packaging from the Mont d'Or while keeping its wooden box. Replace the cheese in its box if necessary.
Add Garlic and Herbs
Using the tip of a knife, make a few small incisions in the cheese. Slice the garlic clove into thin pieces and insert some into the incisions. Add a few sprigs of rosemary or thyme.
Add White Wine
Gently pour the white wine over the Mont d'Or. Lightly season with pepper.
Cook the Mont d'Or
Place the box on a baking sheet or in a small oven-safe dish. Bake for about 20 to 25 minutes, until the center of the cheese is perfectly melted and the top is slightly golden.
Prepare the Bread
While the cheese is baking, slice the country bread into nice pieces. Lightly toast them in the oven or in a pan so they are crispy on the outside while remaining soft in the center.
Add Black Truffle
Once out of the oven, use a mandoline to make thin slices of fresh black truffle. Place some directly on the still-hot Mont d'Or. The heat from the cheese will naturally release the truffle's aromas.
Prepare Truffled Toasts
Also place a few thin slices of black truffle on the toasted bread slices. Add a very light pinch of fleur de sel.
Serve
Serve the Mont d'Or immediately in the center of the table with the toasted bread. Everyone can dip their bread directly into the melted cheese or generously spread it on their toasts.

Plantin Chef’s tip(s)

Add the black truffle only after cooking the Mont d'Or. The cheese, still very hot, is enough to release its aromas without cooking it directly. For an even more intense flavor, you can also slip a few thin slices of truffle under the cheese's rind before serving.
