Preheat the oven to 210 °C. Roll out the puff pastry on its baking paper, ensuring it remains very cold to facilitate the shaping of the twists. A dough that is too soft becomes more difficult to cut and loses its structure during baking. If necessary, place it in the refrigerator for a few minutes before starting.
Fill with summer truffle olive spread
Gently spread the summer truffle olive spread over the entire surface of the pastry in a thin, even layer. This distribution allows for balanced truffle puff twists, with a filling that is present without weighing down the pastry. Leave a slight border free to prevent the filling from overflowing during twisting.
