Préparation

Prepare the waffle batter
In a mixing bowl, combine the egg yolks, flour, milk, melted butter, and salt. Whisk until you achieve a smooth and homogeneous batter. Add the fresh herbs, then incorporate the Plantin winter truffle paste, which will add aromatic depth and a woody note to the mixture.
Resting time
Let the batter rest for 20 to 30 minutes at room temperature. This step allows the flour to hydrate properly and ensures a more uniform texture during cooking.
Cooking the waffles
Preheat the waffle maker to high temperature and lightly grease it. Pour a ladle of batter into the hot waffle maker. For an even more indulgent version, you can add some melting cheese like Comté or Gruyère between two layers of batter. Cook for about 4 to 5 minutes per waffle, until you achieve a well-golden and crispy exterior while remaining soft in the center.
