Truffled Christmas Brie with Black Truffle

Preparation

Prepare the Truffle Cream
Place the mascarpone or thick crème fraîche in a bowl. Add the black truffle pieces and mix gently. Season very lightly with fleur de sel and pepper.
Open the Brie
Using a large knife, carefully cut the Brie in half horizontally. Gently separate the two halves to maintain a nice shape.
Add the Truffle Cream
Generously spread the truffle cream over the entire inner surface of the Brie.
Add Fresh Black Truffle
Using a truffle slicer, create thin slices of black truffle. Distribute them evenly over the truffle cream.
Close the Brie
Carefully replace the top half of the cheese. Press very lightly to adhere the two halves without pushing out the filling.
Let Rest
Wrap the Brie carefully and place it in the refrigerator for at least 12 hours, ideally overnight. This resting time allows the truffle aromas to infuse throughout the cheese.
Serve
Take the Brie out of the refrigerator about 30 minutes before tasting to allow it to return to a creamy texture. Cut it into portions and serve with lightly toasted country bread.

Plantin Chef’s tip(s)

Prepare the Brie the day before: resting it in the fridge is essential to allow the aromas of the black truffle to gradually infuse the cheese. Also, take it out to room temperature about thirty minutes before serving to fully enjoy its texture and flavors.
