To enjoy all the flavours of preserved black truffles, allow for 10-15 grams per person. Also allow for 10% of black truffle fragments in the total ingredients in a recipe.

How to enjoy
Black truffle fragments are the perfect way to enhance an array of dishes, such as poultry, pâté, fish and game. Simply heat the black truffle fragments gently (but don’t overcook) to unleash all their flavour.
Our fresh truffles enter our production facility where they are sorted and selected by our Truffle Masters. The resulting black truffle fragments are then bottled by hand and placed in an autoclave to be sterilised.
Appertisation, the pleasure of black truffles all year round
This sterilising process is known as appertisation. It preserves all the delicious flavours of black truffles, so you can enjoy them whatever the season.
Opt for preserved black truffles and store the black diamond at home to be enjoyed whenever you please! Unlike fresh truffles, preserved truffles should be sliced with a knife instead of being grated with a mandolin. They should then be cooked to unleash all of their flavour.
