Préparation

Open and Empty the Mont d’Or
Using a thin knife, carefully remove the top of the Mont d’Or while keeping the crust intact. Then scoop out the inside of the cheese without damaging the edges. Place the cheese flesh in a bowl to easily mix it with the truffles. This process creates a smooth and fragrant texture.
Mix the Cheese with Truffle
Incorporate the pieces of black truffle into the scooped cheese. Mix thoroughly until you achieve a creamy preparation, dotted with well-distributed truffle pieces. The aroma naturally infuses into the paste, resulting in a delicately flavored tasting experience.
Reconstitute the Mont d’Or
Replace the cheese-truffle mixture back inside the Mont d’Or, ensuring all cavities are filled. Then, put the crust lid back on. Close the box and refrigerate for at least 12 hours to allow the flavors to fully meld and achieve a melting and fragrant texture.
Cooking and Serving
On the day of tasting, preheat your oven to 180°C. Heat your truffled Mont d’Or for about ten minutes, until it becomes gooey. Serve immediately with toasted country bread, sautéed potatoes, or charcuterie. Before tasting, generously sprinkle fresh truffle shavings on top for an intense aromatic touch.

Astuce(s) du Chef Plantin

  • To intensify the flavor, lightly drizzle the cheese with a spoonful of black truffle juice before resting.
  • Do not heat for too long: ten minutes is enough to preserve the delicate aromas of the truffle.
  • Always serve the truffle shavings at room temperature to fully release their woody notes.
