BURGUNDY TRUFFLE
Also known as the autumn truffle, Tuber Uncinatum has a more intense aroma than the summer truffle, with subtle notes of hazelnut, mushroom and woodland.
ALSO KNOWN AS THE AUTUMN TRUFFLE
The Burgundy truffle is harvested in France, as well as in Spain, Italy and some Eastern European countries such as Bulgaria.
Its skin is blackish, while its flesh is crossed by fine white veins and develops brown tones as it reaches maturity.

A TRUFFLE WITH A MORE DISTINCTIVE CHARACTER
It differs from its cousin, the summer truffle, thanks to its slightly more intense aroma and more distinctive character.
On the palate, its initial bitterness fades away, revealing subtle notes of hazelnut, mushroom and woodland.

THE RIGHT WAY TO SERVE IT
To preserve its aroma, grate it over your dishes just before serving. It pairs particularly well with warm dishes but should not be cooked.
