1st-choice brushed black truffles - 110 g

The brushed 1st-choice truffle is a fresh whole truffle that is bottled then sterilised at high temperature in an autoclave. The truffle is classed “1st choice” because it is not perfectly round and has a few slight blemishes. However, it retains all its flavours and aromas.

Preserved truffles, to be enjoyed year-round

The sterilisation method we use is known as appertisation and helps preserve all the flavours of the fresh black truffle, so it can be enjoyed several months later. There is little difference between a fresh black truffle and a preserved truffle:

• The flesh of a preserved black truffle is entirely black, while a fresh black truffle has visible white veins.
• Because of its spongy texture, the preserved black truffle cannot be grated using a mandolin; you will need to cut it with a knife instead.
• The preserved black truffle cannot be eaten raw. Instead add it to your dishes and heat it very gently.
