Minimum quantity
To enjoy all the flavours of preserved black truffle, allow for 10-15 grams per person. In a recipe, keep to a truffle content of 10% of the total ingredients.

Storage
Store in a cool, dry place. Best before: see lid of jar.
How to enjoy
The truffles have already been cooked, so add them, along with their juice, to your dishes and sauces at the last minute. They should not be eaten raw. Heat them gently to make the most of their wonderful flavour. The whole black truffle will go well in a risotto, pâté or with poultry.
Our appertisation procedure means black truffles can be preserved and enjoyed all year round, rather than just a few months a year.
This process, introduced in response to high demand from our Chef customers, involves sorting the fresh black truffles and placing them in jars, which then go into an autoclave to be sterilised at high temperature. The sterilised truffles can then be stored for several months.
All the aromas of the precious black diamond are retained and will be unleashed into your dishes to bring you a unique culinary experience.
